CHICAGO–(BUSINESS WIRE)–What if we could make meat \u2026 better? A new company in Chicago is now producing actual meat with science \u2014 not slaughter \u2014 using breakthroughs in stem cell biology.\n<\/p>\n

<\/a><\/p>\n

\nPaul Burridge, Ph.D., a Northwestern University associate professor of pharmacology, and a growing team of scientists have recently formed a new company called Clever Carnivore<\/a>. They\u2019re fast-tracking meat-making biotechnology and already expanding their business with a new headquarters and lab.\n<\/p>\n

\nThe new 4,179-square-foot facility at 2430 North Halsted St.<\/a> in Chicago\u2019s Lincoln Park neighborhood puts Clever Carnivore near Chicago\u2019s academic epicenter.\n<\/p>\n

\nTime is of the essence<\/b>\n<\/p>\n

\nFood insecurity<\/a> and food prices<\/a> are steadily rising in the U.S. and around the world, a condition made worse in recent years by the COVID-19 pandemic. The cost and complexities of factory farming are growing exponentially, compounded by environmental<\/a> and ethical<\/a> issues.\n<\/p>\n

\n\u201cWe have both the opportunity and the obligation to tackle this problem right now,\u201d said Burridge, Clever Carnivore\u2019s founder and chief scientific officer. \u201cWe can produce healthier, drug-free and cruelty-free meat from live cells without harm. At the same time, we can dramatically reduce greenhouse gas emissions from manufacturing and processing.\u201d\n<\/p>\n

\nImportantly, Clever Carnivore is not producing meat alternatives. It\u2019s making actual pork, beef and chicken using stem cell biology, recombinant protein technology and bioengineering. The cultivated meat is identical, cell for cell, to the chops, steaks and wings found today in your grocer\u2019s meat department.\n<\/p>\n

\nOne major difference is the elimination of pathogens such as salmonella and E. coli \u2014 and the welcome absence of antibiotics, steroids, disinfectants, pesticides and nitrates.\n<\/p>\n

\nCultivated meat is nutritionally equal to traditional meat. Its menu applications \u2014 from high-end cuisine to backyard barbecues \u2014 are entirely the same.\n<\/p>\n

\nCosts for lab-grown meat products are currently higher than those of their conventional counterparts, but with increased volumes, production costs will ultimately be lower than those of factory farming. Clever Carnivore is uniquely positioned to streamline and scale up the cultivated meat production process due to the team\u2019s background in low-cost cell culture media optimization.\n<\/p>\n

\nScience means business<\/b>\n<\/p>\n

\nCultivated meat is an early-stage industry, but the science itself is well established. \u201cThis is yet another demonstration of the potential of stem cell biology to solve complex human and societal challenges,\u201d added Burridge.\n<\/p>\n

\nClever Carnivore\u2019s team of leading scientists also includes Davi Lyra-Leite, a biomedical engineer with expertise in stem cells, metabolism and differentiation; Phillip Freeman, a chemist and bioprocess engineer with expertise in gene therapy manufacturing; Ray Copley, a biomedical scientist, engineer and former aerospace research analyst; and Donny McKenna, a developmental biologist with expertise in biochemical research and drug discovery.\n<\/p>\n
